
Sweet Potato Waffles
Softness and crunch combined in these sweet potato waffles! Perfect for a savory snack or an original brunch, they blend the sweetness of sweet potato with the lightness of a waffle. Enjoy plain or with your favorite toppings!
Ingredients
- 400g sweet potato
- 130g flour (here half wheat, half chickpea)
- 2 eggs
- 5cl milk
- 30g melted butter
- 1 packet of baking powder
- Salt / pepper
- Spices of your choice (here Mexican spices, curry, and paprika)
Preparation
1. Peel and cut the sweet potato into large cubes, then steam or boil.
2. Mix all ingredients in a bowl.
3. Once the sweet potato is cooked, mash it with a fork
4. Add the mashed sweet potato to the previous mixture.
5. Let rest in the refrigerator for 30 minutes.
6. Once the time has elapsed, if your batter seems too thick, you can slightly thin it with a little milk.
7. Cook in your waffle maker as usual.
8. Serve hot or cold accompanied by a salad, spread with fresh cheese and salmon, or use as a replacement for burger buns.
