Ingredients

- 500 g of flour
- 125 g of soft butter in small pieces 3 eggs
- 2 tsp of dry baker's yeast
- 75 ml of milk
- 25 g of sugar
- 1 tbsp of rum
FOR THE FILLING
- 25 g of soft butter
- 250 g of brown sugar (or cassonade sugar)
- 2 tbsp of rum
Preparation
To make the Lille-style waffles filled with brown sugar:
- Place the milk, sugar, and yeast in the bowl of a stand mixer.
- Turn on the machine and then add the flour, butter, eggs, and rum. Continue kneading in the machine.
- Transfer the mixture to a bowl and let it rise for about an hour.
- Preheat your waffle iron with the thin waffle plates. Take small balls of dough and cook them until golden but not overcooked, otherwise they will be too difficult to fill.
- Split them with a knife shortly after removing from the waffle iron (when they puff up), without separating them completely.
- For the filling cream: Mix the soft butter, brown sugar, and rum in a food processor to make the mixture smooth.
