Ingredients

INGREDIENTS

  • 500 g of flour
  • 125 g of soft butter in small pieces 3 eggs
  • 2 tsp of dry baker's yeast
  • 75 ml of milk
  • 25 g of sugar
  • 1 tbsp of rum 

FOR THE FILLING

  • 25 g of soft butter
  • 250 g of brown sugar (or cassonade sugar)
  • 2 tbsp of rum 

Preparation

To make the Lille-style waffles filled with brown sugar:

  • Place the milk, sugar, and yeast in the bowl of a stand mixer.
  • Turn on the machine and then add the flour, butter, eggs, and rum. Continue kneading in the machine.
  • Transfer the mixture to a bowl and let it rise for about an hour.
  • Preheat your waffle iron with the thin waffle plates. Take small balls of dough and cook them until golden but not overcooked, otherwise they will be too difficult to fill.
  • Split them with a knife shortly after removing from the waffle iron (when they puff up), without separating them completely.
  • For the filling cream: Mix the soft butter, brown sugar, and rum in a food processor to make the mixture smooth.
