Tomato Gazpacho

Ingredients

  • 6 tomatoes 
  • 1 cucumber 
  • 1 large onion 
  • 1 red bell pepper 
  • 1 yellow bell pepper 
  • 2 garlic cloves 
  • 4 tablespoons of wine vinegar 
  • 4 tablespoons of olive oil 
  • Juice of 1 lemon 
  • 1 tablespoon of tomato paste 
  • 1 glass of water 
  • Basil 
  • Chili pepper 
  • Salt
  • Pepper

Preparation

Peel, seed and cut the tomatoes into pieces, peel and roughly chop the cucumber and onion, remove the stems and seeds from the peppers and cut them into strips, peel and crush the garlic cloves.

Blend these ingredients using the "Chop" mode, add water, vinegar, oil, lemon juice, basil and tomato paste, then mix everything in your blender.

Season with salt and pepper, add a pinch of chili pepper. If you prefer a more fluid texture, add a little more water. You can also strain the mixture through a chinois for a smooth, pulp-free gazpacho.

Keep chilled until serving.
