  • 250 g squash flesh
  • 2 eggs
  • 20cl milk
  • 200 g flour
  • 50 g butter
  • ½ packet of baking powder
  • Nutmeg and paprika
  • Salt, pepper

1. Cut the squash into cubes and cook in water or steam.
When the squash pieces are cooked (about twenty minutes), blend them into a smooth puree.

2. In a bowl, mix the flour and baking powder.
Gradually incorporate the egg yolks and milk while continuously stirring.

3. Add the softened butter in pieces and the squash puree to the mixture.

4. Season with nutmeg, paprika, salt and pepper to taste.

5. Beat the egg whites until stiff peaks form and gently fold them into the mixture.

6. Let the mixture rest for at least 15 minutes.

7. Oil the LAGRANGE waffle maker with a kitchen brush.
Pour a ladle of waffle batter, flip the waffle maker and cook until the sound signal, keeping an eye on it.
