Fluffy American pancakes, perfectly golden and ready to be enjoyed! Perfect for a gourmet breakfast or comforting snack, they're the ideal base for adding maple syrup, fresh fruits, or a touch of whipped cream. Who's ready to dig in?

  • 300g of flour
  • 50g of sugar
  • 3 eggs
  • 40g of butter
  • 30cl of milk
  • 1/2 packet of baking powder
  • 1 vanilla pod or 1 packet of vanilla sugar
  • 1 pinch of salt

Pancake recipe

American pancakes, the quick and easy recipe for successful brunches, breakfasts, and snacks! Why a quick recipe? Because only 4 steps are needed to make it, and unlike crepes, pancakes don't require resting time (all explanations in the tips below). The weekend treat you'll never get tired of!

1. In a large bowl, mix all the dry ingredients: flour, sugar, vanilla sugar or vanilla pod seeds (split in half and scraped with a knife), pinch of salt, and baking powder.

2. Melt the butter in a double boiler or in the microwave on low power. Make a well in the dry ingredients to incorporate the eggs, melted butter and half of the milk.

3. Mix well to avoid lumps forming, gradually incorporating the remaining milk. You should end up with a smooth, thick, and uniform pancake batter.

4. Grease your pancake griddle and pour a small ladle of batter without spreading it. When you see bubbles forming on the surface of the pancake, it's time to flip it.

Pancake tips

Unlike crepe batter, pancake batter doesn't need to rest once prepared. Indeed, pancake batter contains baking powder which becomes less effective over time.

If you want fluffier pancake batter, the trick is to separate the egg whites from the yolks, beat the whites until stiff peaks form, and fold them into the mixture. A bit more work, but with guaranteed results!

 

Pancake flavor variations

To make flavored pancakes, you can add any of the following:

  • 2 tablespoons of rum, kirsch, or other alcohol of your choice
  • 2 tablespoons of unsweetened cocoa powder
  • 1 tablespoon of orange blossom water
  • 1 small tablespoon of ground cinnamon
  • Citrus zest
