Comforting and full of flavor, this carrot, spice, and coconut milk velouté is a true delight! Smooth, creamy, and slightly spicy, it warms hearts while offering an explosion of flavors. Perfect for a gourmet and cozy break.

Ingredients

  • 5 carrots
  • 2 onions
  • 1 teaspoon of curry powder
  • 1 teaspoon of turmeric
  • 200 ml of coconut milk
  • Vegetable or poultry stock
  • Salt, pepper
  • A few sprigs of coriander (optional)

Soups and veloutés are ideal partners for warming up in winter, especially when they are subtly enhanced by spice combinations. This is the case with this spiced carrot velouté, which retains all its smoothness thanks to the coconut milk.

 

1. Peel and slice the carrots. Also peel and finely chop the onions.

2. In a saucepan, sauté the onions in a little butter or oil until translucent (about 5 minutes) and add the curry and turmeric.

3. Pour the carrot slices into the saucepan and sauté everything for a few more minutes. Add the coconut milk and cover with water, adding the stock cube.

4. Cook until the carrots are very tender (about 20 to 30 minutes depending on the size of the slices). Pour the contents into your Lagrange blender or use the Mix Pro in your saucepan until you obtain a velouté. Season with salt and pepper, taste, and adjust the spices (curry and turmeric) to your liking.

5. Serve hot, adding fresh coriander to the velouté at the last minute.
