A creamy and comforting yellow turnip and parmesan velouté that warms the heart! The sweetness of turnips pairs perfectly with the savory taste of parmesan for a delicious blend. A simple recipe, but full of flavor!

Ingredients

  • 4 large yellow turnips
  • 2 potatoes
  • 1 onion
  • 1 chicken stock cube
  • 8.5 fl oz (25 cl) liquid cream
  • 125g (4.4 oz) grated parmesan
  • 1 teaspoon of nutmeg
  • Salt and Pepper
  • 4 slices of smoked bacon (optional)
  • 2 slices of country bread or whole grain bread (optional)

Soups accompany our winter, and this yellow turnip velouté will become your must-have for cozy evenings! Smooth and creamy, this velouté is subtly enhanced by the richness of parmesan.

1. Peel the turnips and potatoes and cut them into cubes.

2. In a saucepan, sauté the onion in a little butter or oil until translucent (about 5 min) and add the diced potatoes and turnips. Sauté for a few more minutes.

3. Cover the vegetables with water and add the stock cube. Cook until the vegetables are tender (about 30 minutes).

4. Meanwhile, towards the end of cooking, if desired, sauté the bread cut into small cubes in a pan, stirring constantly to dry it out. Add the slices of smoked bacon and cook until they have flavored the croutons and become crispy.

5. Blend the vegetables and stock in your Lagrange blender or using the Mix Pro immersion blender. Add the liquid cream, grate the parmesan and mix everything together. Season with salt and pepper and add nutmeg to taste.

6. Serve hot, adding the bread cubes, smoked bacon and parmesan shavings at the last minute.
