Ingredients

  • 1 cauliflower
  • 2 sweet potatoes
  • 1 teaspoon of cumin
  • 1 teaspoon turmeric
  • 1/2 teaspoon curry powder
  • 1 onion
  • 1 clove of garlic
  • 1 chicken stock cube
  • 20cl coconut milk (optional)
  • Sliced almonds or roasted cashews (optional)
  • Salt and pepper

Taking the time to make a good homemade soup for your starter or light dinner is the guarantee of a comforting and delicious moment! With this cauliflower velouté made with a blender or hand blender, enhanced by mild spices, it's impossible not to be won over by these uniquely creative combinations.

1. Peel the sweet potatoes and cut them into small pieces, separate the cauliflower into florets, mince the garlic and onion.

2. In your saucepan, sauté the garlic and onion in a little oil until translucent.

3. Add the cauliflower and potatoes. Sprinkle the spices (cumin, turmeric and curry), mix everything for a few minutes over medium heat.

4. Cover with water and add the chicken stock to the preparation. Let cook until the vegetables are tender (about 30 minutes, depending on the size of your pieces).

5. Blend the preparation with your Mix Pro hand blender or your LAGRANGE blender. If you like very creamy and smooth veloutés, you can add coconut milk to your velouté.

6. Season with pepper and salt, taste to adjust the seasoning and add more spices if desired. If you like, sprinkle with sliced almonds or roasted cashews to add some crunch.
