
Crispy Waffles
The crispy waffles, perfectly golden and delightfully light, are perfect for a sweet break. Each bite is a perfect blend of crunchiness on the outside and softness on the inside. Enjoy them plain or with your favorite toppings!
Ingredients
The waffle batter:
- 3 eggs
- 75g of butter
- 200g of milk
- 200g of water
- 60g of sugar
- 250g of flour
Flavor the batter (optional):
- A few drops of orange blossom water
- Seeds from half a vanilla pod
- Half a grated tonka bean
- One tablespoon of rum or Grand Marnier

Maxime's recipe - Empreinte Sucrée:
1. Preheat your waffle maker.
2. Separate the egg whites from the yolks. Set aside the whites.
3. Mix all ingredients together using an immersion blender (or a blender).
4. Beat the 3 egg whites until stiff peaks form. Add the beaten egg whites to the batter and gently fold in using a rubber spatula.
5. Use the batter immediately. Spread the batter over the entire surface of the mold. Cook until the waffle is golden and crispy. Place the waffles on a wire rack to cool (important to keep them crispy).
