Cookie Dough Ice Cream

Ingredients

Cookie dough:

  • 175g flour (type 45)
  • 80g muscovado sugar (or brown sugar)
  • 20g sugar
  • 125g soft butter
  • 2 pinches of vanilla salt (or coarse salt)
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk (fresh, 3.5% fat)
  • 100g chocolate chips

Vanilla ice cream:

  • 5 egg yolks
  • 500g whole milk
  • 50g liquid cream
  • 90g sugar
  • 2 vanilla pods

Preparation

Cookie dough:

1. Put the flour and both sugars in the mixing bowl.

2. Add the butter in pieces, vanilla salt, vanilla extract and milk.

3. Insert into the food processor and mix for 15 seconds.

4. Add chocolate chips and mix.

5. The cookie dough can be eaten with or without baking.

Vanilla ice cream:

1. In a saucepan, mix milk and cream.

2. Add the vanilla seeds and the split pods.

3. Bring to a boil then remove from heat for 15 minutes.

4. In a bowl, mix egg yolks with sugar. Remove vanilla pods from the saucepan.

5. Gradually add the milk/cream mixture to the egg/sugar mixture.

6. Pour into the saucepan and cook over low heat, stirring constantly until the mixture coats the back of a spoon.

7. Strain the custard through a fine-mesh sieve and transfer to a cold bowl to stop the cooking process.

8. Let cool for at least 30 minutes in the refrigerator before churning the mixture in the ice cream maker for 45 minutes.

9. Put the cookie dough pieces in an ice cream container, alternating with vanilla ice cream.

10. Refrigerate for at least 3 hours.
