
Tomato crumble with mixed sheep and goat cheese and honey ice cream
A perfect blend of flavors: tomato crumble with delicious touches of mixed sheep and goat cheese, all enhanced by a smooth and creamy honey ice cream. A sweet and savory combination that will melt in your mouth!
Ingredients
For the ice cream
- 4 egg yolks
- 80g honey
- 30g powdered sugar
- 30cl milk
- 30cl liquid cream
For the crumble
- 50g oat flakes
- 100g flour
- 100g butter
- 2 tablespoons sugar
- 1kg tomatoes
- 1 large onion
- Olive oil
- 80g grated mixed sheep and goat cheese + 150g cubed
- Salt
- Herbs de Provence
- Espelette pepper
Preparation
1. Bring the milk and cream to a boil.
2. Beat the egg yolks and sugar in a bowl then pour the milk and cream over. Mix well.
3. Return to the saucepan and heat while stirring until the mixture coats the spoon. Add honey and let cool.
4. Once cooled, place the mixture in an ice cream maker for 40 minutes. Put back in the freezer for half an hour before serving.
5. Preheat the oven to 180°C.
6. Mix the grated cheese, flour, butter and oat flakes to obtain a sandy mixture, then set aside.
7. Cut the tomatoes into dice and remove the seeds. Slice the onion and sauté it in a little olive oil.
8. Remove from heat, mix the tomatoes, onions, sugar and seasoning. Distribute in a gratin dish or individual ramekins. Add the cheese cubes then the crumble mixture.
9. Bake for 35 to 40 minutes at 180°C. Serve with a scoop of honey ice cream.
