
Croque Fish
The Croque Fish, a touch of freshness and deliciousness in a single bite! With delicately breaded fish and a light sauce, this croque revisits the classic with originality. Perfect for a quick and tasty lunch break!
Ingredients
- 8 slices of white bread
- 4 white fish fillets
- 2 eggs
- Flour
- Breadcrumbs
- 1 lemon
- 2 Gem lettuces
- 1 Cucumber
- Mayonnaise
Preparation
1. Put the fish fillets in the freezer.
2. When the fish is firm (not frozen), use a fish-shaped cookie cutter to cut the fillets.
3. Season the fish with salt and refrigerate for 1 hour.
4. Bread the fish by coating them in flour, then beaten eggs, and finally breadcrumbs.
5. Using the same fish-shaped cookie cutter, cut out the slices of white bread.
6. Wash the gem lettuces and cucumber.
7. Slice the gem lettuces and cut the cucumber into sections.
8. Turn on the Lagrange plancha, add a drizzle of oil and place the breaded fish.
9. Place the gem lettuce, drizzle with lemon juice.
10. Turn the fish over once the first side is golden.
11. Add a knob of butter then the slices of white bread.
12. When the bread slices are golden, the fish is cooked and the gem lettuce is seared, assemble the croques in the following order: a slice of white bread, gem lettuce, mayonnaise and fish. Top with a slice of cucumber and white bread.
