
Goat cheese and basil sorbet

Ingredients
- 200g goat cheese
- 15cl whole milk
- 2 egg whites
- 1 bunch of basil
- 1 clove of garlic
- olive oil
- tomato gazpacho
Preparation
1. Put the milk with 10 basil leaves in a saucepan. Bring to a boil, remove from heat and let infuse covered.
2. Strain the milk.
3. Using a blender, mix the milk, goat cheese, garlic, egg whites, and 4 tablespoons of olive oil.
4. Pour the liquid into the LAGRANGE ice cream maker. Select 45 minutes and let it run.
5. Pour the gazpacho into 4 plates. Add a quenelle of ice cream, a drizzle of olive oil, and serve.
