
Lemon Meringue Waffle

Ingredients
Lemon curd:
- zest of one lemon
- 65g of sugar
- 50g of butter
- 1 egg
- 50g of lemon juice
Italian meringue:
- 50g of egg whites
- 25g of water
- 75g of powdered sugar
- 20g of granulated sugar
- 50g of waffle batter
Preparation
Preparation of the lemon curd:
1. Blend the sugar with the lemon zest in a mixer.
2. Whisk the egg and sugar mixture until it becomes pale and creamy.
3. Heat the butter and lemon juice.
4. Combine both mixtures in the same saucepan, cook until 80°C (176°F) over low heat.
5. Mix at the end of cooking.
6. Let it rest in the refrigerator for 2 hours.
Preparation of the Italian meringue:
1. Heat the sugar and water to 118°C (244°F).
2. Beat the egg whites until stiff, when they start to form peaks add 20g of sugar.
3. When you get a bird's beak consistency, slowly pour in the syrup while continuing to beat at medium speed until cooled.
4. Put the meringue in a piping bag.
The finishing touches:
1. Make 8 waffles and fill the pockets with lemon curd, then generously pipe dots of meringue on top.
