
Rose ice cream: a fresh and floral summer
Rose ice cream is summer in a cone. A delicate and floral taste that transports you to a fragrant garden. Refreshing, sweet, and original, it's the perfect delicacy to savor the summer season with elegance.
Ingredients
- 12.3 oz (350 g) of rose petals (from the garden! but you can buy them at the market or from your florist. Choose red ones).
- 4 egg yolks
- 4.6 oz (130 g) of liquid cream
- 17 fl oz (50 cl) of milk
- 2.1 oz (60 g) of sugar
Preparation
To begin
Rinse the rose petals under water and infuse them for a good ten minutes in your heated mixture of cream and milk (don't turn off the heat, keep it very low!).
Meanwhile, whisk the yolks and sugar until you get a smooth and almost frothy mixture.
Pour everything into your saucepan and cook the mixture until it coats the back of a spoon ("coats"? It's a cooking technique: the spoon is like coated with the mixture when it's cooked).

Chill in the refrigerator and place the mixture in your LAGRANGE ice cream maker for 30 minutes, whose bowl has been previously placed in the freezer for at least 8 hours.
You can add a little food coloring to obtain a pretty pink color.
