
Pumpkin Velouté
The pumpkin velouté is a gentle and comforting starter, perfect for cool seasons. Its creamy texture and slightly sweet flavor appeal to both young and old. Enhanced with a touch of cream and spices like nutmeg, this velouté brings warmth and deliciousness to the table.
Ingredients
- 500 g of potatoes (the mashing kind)
- 1 carrot (to add flavor and color to your soup)
- 1 kg of pumpkin (the base of your recipe)
- 1 to 2 portions of Vache qui rit® (this is for creaminess!)
- Salt and pepper
- A bit of cream or milk (to enhance but it's optional)
Preparation
To start
It's very easy and quick (which is perfect if you're coming from the office and short on time).
Boil a liter of water and while waiting for it to boil, peel, wash, and cut your vegetables into cubes (this makes cooking easier) and throw them in the water.
Cover and cook over medium heat for about forty minutes (giving you time to attend to other tasks).

Take out your LAGRANGE hand blender and blend everything.
Heat everything again while adding the cheese, milk or cream, a pinch of nutmeg, salt and pepper.
