- 900 g of carrots
- vegetable broth
- 45 g of butter
- 45 g of crème fraiche
- 3 tablespoons of cornstarch
- 1 egg yolk
- salt and pepper
- ground nutmeg.

Preparation
Wash the carrots, peel them and cut them into chunks.
Cook them for 20 minutes in the vegetable broth.
Put them in the blender on "Puree" mode, add the melted butter, the cornstarch mixed with the crème fraiche, salt and pepper, then the nutmeg.
Then use the "Mix" mode.
Keep warm over very low heat. Then add an egg yolk just before serving.
