Vous ne pouvez pas faire de fromage blanc dans la Yaourtière Ligne. Vous devez avoir la Yaourtière Fromagère Ligne car le temps et la température sont plus élevés.

Comment réaliser des yaourts au lait végétal ?

Nous réalisons des tests avec des laits "standards", habituellement distribués en grandes surfaces (vache, chèvre et soja). La réalisation de yaourts au laits végétaux est plus complexe du fait du manque de gras dans ces laits et de la liquidité de ces laits qui empêchent une bonne prise des yaourts. Pour les laits végétaux d'amande ou de coco, il est possible de réaliser des yaourts en programmant 15 heures de cuisson et 5 cuillères à café de lait en poudre. Une prise optimum sera obtenue par l'ajout d'agar agar.

La qualité du lait a une influence sur la condensation. Par ailleurs, plus le lait sera écrémé plus il y aura de condensation dans la Yaourtière.

Les yaourts sont trop liquides, à quoi est-ce dû ?

Des yaourts trop liquides peuvent être le résultat d’une fermentation trop courte ou d’un lait trop léger (écrémé). Pour y remédier, augmentez la durée de fermentation et privilégiez un lait entier ou ajoutez du lait en poudre.

Il est important de ne pas déplacer, ni débrancher votre Yaourtière et de ne pas placer votre Yaourtière sur un élément qui vibre tel que le frigidaire / lave-vaisselle.

Une durée de fermentation trop longue peut rendre les yaourts trop acides. Pour un goût plus doux, réduisez le temps de fermentation ou ajustez le type de ferment que vous utilisez.
