An excessive fermentation time can make yogurts too sour. For a milder taste, reduce the fermentation time or adjust the type of starter culture you use.

Runny yogurt can be the result of too short a fermentation time or using too light (skimmed) milk. To fix this, increase the fermentation time and use whole milk or add powdered milk. 

It is important not to move or unplug your Yogurt Maker and not to place your Yogurt Maker on a vibrating surface such as a refrigerator or dishwasher.

We conduct tests with "standard" milk types, commonly found in supermarkets (cow, goat, and soy). Making yogurt with plant-based milk is more complex due to the lack of fat in these milks and their liquid consistency, which prevents the yogurt from setting properly. For almond or coconut milk, it is possible to make yogurt by programming 15 hours of cooking time and adding 5 teaspoons of powdered milk. Optimal setting can be achieved by adding agar agar.

You cannot make fromage blanc in the Ligne Yogurt Maker. You need the Ligne Cheese & Yogurt Maker because the time and temperature requirements are higher.

You can use whole milk, semi-skimmed milk, or soy plant-based milk (you can add agar agar to thicken the yogurt's consistency). Whole milk gives a firmer texture.
