
Mint ice cream with chocolate chips

Ingredients
- 5 egg yolks
- 60g sugar
- 50 cl whole milk
- 10 sprigs of mint
- 10cl mint syrup
- 100g chocolate chips
Preparation
1. Place the ice cream maker bowl in the freezer for a minimum of 12 hours.
2. Heat the milk and infuse the mint off the heat for 30 minutes.
3. Remove the mint sprigs and reheat the milk.
4. Whisk the egg yolks with sugar until pale, then pour in the hot milk. Mix well and return to the saucepan. Heat until the mixture coats the back of a spoon.
5. Add the syrup and let the mixture cool.
6. Pour the mixture into the ice cream maker and set for 40 minutes. After 10 minutes, add the chocolate chips
