Ingredients

  • 8 Breton butter cookies or shortbreads
  • 1 liter of whole milk
  • 6 drops of rennet
  • 1 tablespoon of fromage blanc (in a draining basket)
  • 2 tablespoons of powdered sugar
  • A punnet of raspberries
  • A punnet of blueberries
  • A punnet of blackberries
  • A punnet of red currants
  • A few squares of white chocolate (optional)

Preparation

The day before

Make your homemade fromage blanc the day before:

Vigorously mix the fromage blanc with whole milk. Add the 6 drops of rennet and gently stir.

Pour the mixture into the large draining basket of the LAGRANGE cheese maker. Turn on the cheese maker for 12 hours of heating.

Once the cycle is complete, remove the draining basket and empty the whey from the container. Place the draining basket in the high position to drain the cheese until serving time.

Next

Shortly before serving, vigorously mix the fromage blanc with powdered sugar in a large bowl.

Crush the shortbread cookies and place them at the bottom of each serving glass.

Add the sweetened fromage blanc and then the red berries. You can garnish with a red berry coulis served separately or over the fruits, and white chocolate shavings for decoration.
