
Apple and Almond Rose Cake
A cake deliciously flavored with apple and almond. The perfect combination of softness and flavor, for a gourmet and refined moment. To share or savor solo, it will add a touch of happiness to your day!
Ingredients
Crepe batter:
- 4 eggs
- 200 g of flour
- 100 g of sugar
- 50 g of butter
- 5 g of salt
- 60 cl of milk
Almond cream:
- 2 egg yolks
- 30 g of flour
- 30 g of cornstarch
- 50 cl of milk
- 120 g of sugar
- 100 g of almond powder
- 5 g of almond extract
Other:
- 2 apples
Preparation
1. Melt the butter in a bowl.
2. Make the crepe batter by mixing all the ingredients.
3. Strain the mixture using a fine-mesh sieve and let it rest in the refrigerator for 1 hour.
4. Cook 8 crepes and set them aside on a plate, at room temperature, covered with a kitchen towel.
5. Heat the milk with the almond extract, meanwhile mix the egg yolks and sugar until pale and creamy.
6. Pour 1/4 of the warm milk over the yolks and sugar.
7. Mix vigorously then incorporate the flour, cornstarch, and almond powder. Ensure the mixture is well combined, then pour it into the saucepan with the remaining milk.
8. Heat over low heat, stirring regularly. Once the mixture has thickened, transfer it to a bowl and cover with plastic wrap touching the surface of the cream. Then let it cool at room temperature.
9. Wash the apples and slice them thinly.
10. Cut the crepes into strips about 7 cm wide.
11. Spread the cream thinly on the crepe strips, add the apple slices, and roll them up. Repeat the process until you have a crepe cake about 20 cm in diameter.
12. Gently place it on a pie dish, hide a charm inside, and enjoy!
