
Street food Crepe / Galette
The street food galette is the perfect gourmet snack to go! A delicious blend of flavors in a buckwheat galette, filled with fresh and tasty ingredients. Perfect for a flavor explosion, ideal for meals on the go, without ever sacrificing pleasure!
Ingredients
Galette batter:
- 250 g of buckwheat flour
- 50 cl of water
- 8 g of salt
- 40 g of semi-salted butter
- 1 egg
Filling:
- 100 g of mayonnaise
- 4 carrots
- 1/2 white cabbage
- 16 slices of Porchetta
- 4 egg yolks
Preparation
1. Pour the flour and salt into a mixing bowl. Make a well and pour in the egg and 20cl of water in a thin stream, while whisking.
2. Melt the butter and add it to the batter. Whisk for 5 to 10 minutes to obtain a smooth and thick batter. Let it rest for 12 hours in the refrigerator.
3. After resting, add 25cl of water and mix until you get a smooth batter. Let it rest for 1 hour at room temperature.
4. Cook 4 galettes using your crepe maker and let them rest on a plate covered with a kitchen towel.
5. Wash the carrots and grate them, do the same with the cabbage. Combine the two vegetables, add the mayonnaise and mix.
6. On a galette, place the vegetables on the upper half and fold the crepe in half. Add the cold cuts and some vegetables and roll into a cone shape.
7. Place in a cone or suitable bowl, finish by adding the raw egg yolk.
8. All that's left is to enjoy!
