
Sour cherry and burrata focaccia

Ingredients
- 1 focaccia dough
- 125 g (4.4 oz) of sour cherries
- 8 slices of pancetta
- 1 large burrata
- a few basil leaves
- salt and pepper
Preparation
1. Preheat the Lagrange pizza oven to 350°C (662°F).
2. Roll out the dough into circles. Oil your fingers and make "dimples" on top of the focaccia with your fingers, pour olive oil into each dimple.
3. Add fleur de sel and bake for 10 minutes.
4. When out of the oven, place the focaccia on a wire rack, add halved sour cherries and thinly sliced pancetta.
5. Garnish with basil leaves on top and enjoy!
