Craving something sweet with autumn flavors? These butternut squash crepes with maple syrup are the perfect marriage between tender butternut squash and delicious maple syrup. A true delight, ideal for warming up your mornings or surprising your guests at snack time! Perfect for a comforting moment, they bring a touch of sweetness and color to your days.

Ingredients

Serves 6: 

  • 2.5 kg of butternut squash 
  • 5 eggs
  • 300 g of flour
  • 3 teaspoons of salt
  • Pecan nuts
  • Maple syrup

Preparation

1. Peel and deseed the butternut squash, then cut it into cubes.

2. Cook the butternut squash cubes for 20 minutes in boiling water.

3. Mash the butternut squash in a bowl.

4. Add the eggs and mix thoroughly.

5. Add the flour and salt, and mix again.

6. Let the batter rest for 1 hour in the refrigerator.

7. Cook the crepes on your favorite Lagrange crepe maker.

8. Top with pecan nuts and maple syrup to taste.

9. Enjoy!
